Called "Pla Kapong" (ปลากะพง) in Thailand or known globally as Barramundi, this member of the seabass family is native to Asia and regions of Australia. Their raw flesh is a mild pink and when cooked meat turns white. Barramundi has a firm, moist texture and large flakes. The fish is prized for its sweet, buttery flavour.
